½ cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy cream

1 cup fresh strawberries, pureed (plus extra for topping)

1 tablespoon lemon juice

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the crushed digestive biscuits or graham crackers, melted butter, and granulated sugar. Stir until well combined.

      - Press the mixture evenly into the bottom of a lined 9x9-inch baking dish, creating a firm crust. Place it in the refrigerator to set while you prepare the filling.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth (about 2-3 minutes).
