Ingredients

1 cup fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon lemon juice

1 cup heavy whipping cream

3 tablespoons powdered sugar

1 teaspoon pure vanilla extract

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1 large egg

Instructions

Prepare the Strawberries: In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Mix well and let sit for about 20 minutes to macerate.

Make the Whipped Cream: In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract while continuing to whip until stiff peaks form. Set aside in the refrigerator.

Prepare the Cookie Dough: In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.

Create the Base: In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg until well combined. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Shape the Cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Using a small cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, spaced about 2 inches apart. Flatten each ball slightly with your fingers.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are firm but the centers are still soft. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Assemble the Sandwiches: Once the cookies are completely cool, take one cookie and spread a layer of whipped cream on the flat side. Top with a spoonful of macerated strawberries, then place another cookie on top, flat side down.

Freeze the Sandwich Coins: Arrange the assembled sandwich coins on a baking sheet and place them in the freezer for at least 1 hour to firm up.

Serve: Once frozen, serve the strawberry shortcake sandwich coins immediately, or store in a sealed container in the freezer for up to 2 weeks. Enjoy these refreshing treats on a hot day!
