Frozen Watermelon Pops

Ingredients
  

4 cups seedless watermelon, cubed

2 tablespoons honey or agave syrup (adjust based on sweetness preference)

1 lime, juiced

1/4 cup coconut water (optional for added flavor)

Mint leaves, for garnish (optional)

Instructions
 

Prepare the Watermelon: Start by cutting the seedless watermelon into cubes. Make sure to remove any seeds if necessary.

    Blend the Mixture: In a blender, combine the watermelon cubes, honey or agave syrup, lime juice, and coconut water (if using). Blend until smooth and evenly mixed. Taste and adjust the sweetness if needed.

      Strain (Optional): For a smoother texture, you can strain the mixture through a fine mesh sieve to remove pulp. This step is optional based on your texture preference.

        Fill the Molds: Pour the watermelon mixture into popsicle molds, leaving a small space at the top to allow for expansion as they freeze. If you’d like, drop a mint leaf into each mold for a refreshing visual and flavored twist.

          Insert Sticks: Place the sticks in the molds, making sure they stand upright.

            Freeze: Transfer the molds to the freezer and let them freeze for at least 4-6 hours, or until completely solid.

              Unmold the Pops: To remove the popsicles from the molds, run them under warm water for a few seconds to loosen them. Gently pull on the sticks to take them out.

                Serve and Enjoy: Enjoy your refreshing watermelon pops as a cool treat on a hot day! Garnish with extra mint leaves, if desired.
