Ingredients

2 cups Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup mixed berries (strawberries, blueberries, raspberries)

1/4 cup granola (or nuts, for crunch)

1/4 cup dark chocolate chips (optional, for drizzle)

2 tablespoons shredded coconut (optional, for extra flavor)

Instructions

Prepare the Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until everything is well blended and creamy.

Line the Baking Sheet: Line a baking sheet with parchment paper, ensuring it's large enough to hold the yogurt mixture with some depth.

Spread the Yogurt: Pour the yogurt mixture onto the parchment-lined baking sheet. Using a spatula, spread it out evenly to about 1/4 inch thick.

Add Toppings: Distribute the mixed berries evenly over the yogurt base. Then sprinkle the granola, dark chocolate chips, and shredded coconut on top. Press down gently to ensure the toppings stick.

Freeze: Transfer the baking sheet to the freezer and let it freeze for at least 4 hours, or until completely solid.

Break into Pieces: Once frozen, remove the bark from the freezer. Lift it out of the baking sheet by the edges of the parchment paper. Use your hands or a knife to break the bark into pieces.

Serve and Enjoy: Enjoy immediately or store any leftovers in an airtight container in the freezer for a refreshing treat later!
