2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 cup dark chocolate chips (preferably 70% cocoa)

1/4 cup chopped almonds (or your preferred nut)

Pinch of sea salt

Optional toppings: shredded coconut, chia seeds, or additional chopped nuts

Instructions
 

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Stir until well blended and smooth.

    Mold the Coins: Line a baking sheet with parchment paper. Using a tablespoon, portion dollops of the yogurt mixture onto the parchment to form circles (approximately 2 inches in diameter). Aim for about 12 coins.

      Add the Chocolate and Nuts: In a microwave-safe bowl, melt the dark chocolate chips in the microwave in 20-second intervals, stirring between each interval until smooth. Drizzle a small amount of melted chocolate over each yogurt coin and sprinkle with chopped almonds. Feel free to add any optional toppings at this stage.

        Freeze: Place the baking sheet in the freezer and freeze for at least 2-3 hours, or until the yogurt is firm and completely frozen.
