Frozen Yogurt Churro Cookie Coins

1 cup plain Greek yogurt

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

For the Churro Coating:

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon melted butter

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Make the Churro Cookie Dough: In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry mixture to the wet mixture, stirring until just combined.

      Form the Cookie Coins: Scoop about 1 tablespoon of dough and roll it into a ball. Flatten it slightly into a coin shape and place it on the prepared baking sheet. Repeat until all the dough is used, leaving some space between each coin.
