Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup brewed coffee, cooled

1/2 cup almond butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 cup cocoa powder

1/2 cup chopped almonds (toasted if preferred)

1/4 cup dark chocolate chips (optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, cooled brewed coffee, almond butter, honey (or maple syrup), and vanilla extract. Mix well until all ingredients are fully incorporated and smooth.

Add Cocoa: Sift in the cocoa powder and mix thoroughly until the mixture is uniform in color and texture.

Incorporate Almonds: Fold in the chopped toasted almonds and dark chocolate chips (if using). Ensure they are evenly distributed throughout the yogurt mixture.

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

Spread the Mixture: Pour the yogurt mixture into the prepared baking dish and spread it evenly with a spatula.

Freeze the Bars: Cover the baking dish with plastic wrap and place it in the freezer. Freeze for at least 4 hours or until firm.

Cut the Bars: Once fully frozen, remove the dish from the freezer. Lift out the frozen yogurt slab using the parchment paper overhang. Use a sharp knife to cut it into bars (about 12-16 pieces).

Serve: Serve immediately or store the bars in an airtight container in the freezer. Enjoy a delicious and healthy treat anytime!
