1 teaspoon vanilla extract

1/2 teaspoon sea salt

1 cup Greek yogurt (plain or vanilla)

1/2 cup dark chocolate chips

1/4 cup finely chopped dark chocolate or chocolate-covered espresso beans (optional for added crunch)

Prep the Granola Mixture: In a large mixing bowl, combine the rolled oats, chopped nuts, cocoa powder, and sea salt. Stir until well mixed.

    Combine Wet Ingredients: In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, brewed espresso, and vanilla extract until smooth.

      Mix It Up: Pour the wet mixture into the dry ingredients and stir until everything is evenly coated.

        Shape Clusters: Line a baking sheet with parchment paper. Using your hands or a spoon, form small clusters of the granola mixture and place them on the baking sheet. Space them apart as they will expand slightly.
