Ingredients

1 cup rolled oats

1 cup Greek yogurt (plain or flavored)

1/2 cup almond milk (or any milk of your choice)

2 tablespoons honey or maple syrup

1/2 teaspoon vanilla extract

1/2 cup fruit jam (your favorite flavor, such as strawberry, raspberry, or blueberry)

1/4 cup chopped nuts (walnuts or almonds work well)

1/4 cup fresh fruit (optional, like berries or banana slices)

Cooking spray or silicone muffin liners

Instructions

Prepare the Mixture: In a large mixing bowl, combine the rolled oats, Greek yogurt, almond milk, honey (or maple syrup), and vanilla extract. Stir until the mixture is well combined and the oats are fully coated with the yogurt.

Add the Extras: Gently fold in the chopped nuts and fresh fruit, if using, ensuring they are evenly distributed throughout the mixture.

Mold the Bites: Lightly grease a muffin tin with cooking spray or line it with silicone muffin liners. Using a spoon, fill each muffin cup with the oatmeal mixture, pressing it down to create a compact layer.

Add Jam Layer: Make a small indentation in the center of each bite and drop in about a teaspoon of fruit jam into each indentation. You can swirl the jam into the oatmeal mixture lightly if desired.

Freeze: Place the muffin tin into the freezer and freeze for about 4-6 hours, or until the bites are solid.

Serve and Enjoy: Once frozen, remove the Oatmeal Jam Bites from the muffin tin. If using a muffin tin, you may need to run a small knife around the edges to pop them out. Store any leftovers in an airtight container in the freezer. Enjoy these delightful, nutritious snacks straight from the freezer!
