Ingredients

2 cups ripe peaches, peeled and diced

1 cup plain Greek yogurt

1 cup vanilla almond milk (or any preferred milk)

1/2 cup honey or agave syrup

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup granola (for topping)

Optional: fresh mint leaves for garnish

Instructions

Prepare the Peaches: In a medium bowl, mix the diced peaches with a tablespoon of honey and let sit for about 10 minutes. This will allow the peaches to release their juices and enhance their flavor.

Blend the Mixture: In a blender or food processor, combine the prepared peaches, Greek yogurt, almond milk, remaining honey, vanilla extract, cinnamon, and nutmeg. Blend until smooth and creamy. You can leave some small chunks of peach for added texture if desired.

Pour into Molds: Pour the peach yogurt mixture into silicone molds or coin-shaped ice cube trays, filling each to the top. Tap the molds gently on the counter to eliminate air bubbles.

Freeze: Place the molds in the freezer and let them chill for at least 4-6 hours, or until completely frozen.

Prepare Granola Topping: While the yogurt coins are freezing, mix the granola with a sprinkle of cinnamon to enhance its flavor. Set aside.

Serve: Once the yogurt coins are fully set, carefully remove them from the molds. Place the coins on a serving platter or individual dessert bowls. Top with a sprinkle of the cinnamon granola and garnish with fresh mint leaves for a pop of color and freshness.

Enjoy: Serve immediately for a refreshing treat, or store the coins in an airtight container in the freezer for up to two weeks. Enjoy your delicious Frozen Yogurt Peach Cobbler Coins!
