Ingredients

2 cups plain Greek yogurt

1 cup fresh pineapple, chopped

1 tablespoon honey (or maple syrup for a vegan option)

2 tablespoons chia seeds

1 teaspoon vanilla extract

A pinch of salt

Extra pineapple chunks and shredded coconut for garnish (optional)

Instructions

Blend the Base: In a blender, combine the Greek yogurt, chopped pineapple, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and well combined. You can leave a few small chunks of pineapple for texture if desired.

Mix in Chia Seeds: Pour the blended yogurt mixture into a mixing bowl and stir in the chia seeds. Mix thoroughly to ensure the seeds are evenly distributed throughout the yogurt.

Prepare the Molds: If you haven’t done so already, prepare your popsicle molds by rinsing them with warm water (this helps with easier removal later).

Fill the Molds: Carefully pour the yogurt-chia mixture into the molds, leaving a little space at the top for expansion. You can poke in some extra pineapple chunks for added flavor and fun!

Insert Sticks: If your molds come with their own sticks, insert them according to the manufacturer’s instructions. If not, you can cover the mold with foil and insert wooden sticks through the foil for support.

Freeze: Place the filled popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

Unmold & Serve: To remove the pops, run warm water over the outside of the molds for a few seconds to loosen them. Gently pull on the sticks to remove the popsicles. If desired, roll the pops in shredded coconut before serving for an extra tropical touch.

Enjoy: Serve immediately and enjoy your delicious Frozen Yogurt Pineapple Chia Pops on a hot day!
