Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup fresh raspberries (plus extra for topping)

1/4 cup honey or maple syrup (adjust for sweetness)

1/4 cup chia seeds

1 cup granola (your favorite variety)

1/2 cup almond or peanut butter (for binding)

1 teaspoon vanilla extract

A pinch of salt

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well until smooth.

Add the Raspberries: Gently fold in the fresh raspberries, taking care not to crush them. You want the raspberries to remain intact for added texture.

Incorporate Chia Seeds: Sprinkle in the chia seeds and mix thoroughly. The chia seeds will absorb moisture and help the mixture to set.

Prepare the Crunch Base: In a separate bowl, mix the granola and almond (or peanut) butter until the granola is well coated. This will serve as the crunchy base of your bars.

Layer in the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal. Start by pressing the granola mixture firmly into the bottom of the dish, creating an even layer.

Spread the Yogurt Mixture: Pour the yogurt and raspberry mixture over the granola base, spreading it evenly with a spatula.

Add Toppings: Scatter a handful of extra raspberries on top for garnish and a burst of color.

Freeze: Cover the dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4-6 hours, or until completely firm.

Cut and Serve: Once frozen, remove the bars from the baking dish using the parchment paper overhang. Place on a cutting board and slice into squares or rectangles, as desired.

Storage: Keep leftovers in an airtight container in the freezer for up to a month. Enjoy the refreshing taste any time!
