2 cups plain Greek yogurt (or your favorite yogurt flavor)

1 cup fresh raspberries (or frozen, thawed)

1 cup granola (store-bought or homemade)

16 small whole grain cookies (like oat or almond cookies, 2 inches in diameter)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Yogurt Mixture: In a large bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and well incorporated. Taste and adjust sweetness if needed.

    Add Raspberries: Gently fold in the fresh raspberries, being careful not to mash them too much. The goal is to have some whole raspberries visible.

      Assemble the Sandwiches: Take one cookie and spread a generous tablespoon of the yogurt mixture on the flat side. Sprinkle a layer of granola over the yogurt. Top with another cookie, flat side down, to create a sandwich. Press gently to adhere.
