Frozen Yogurt Raspberry Swirl Pops

2 cups Greek yogurt (plain or vanilla)

1 cup fresh or frozen raspberries

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Prepare Raspberry Swirl: In a small saucepan over medium heat, combine the raspberries, honey or maple syrup, lemon juice, and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally, until the raspberries break down and the mixture thickens slightly. Remove from heat and let cool.

    Mix Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Mix well until smooth.

      Layer and Swirl: In your popsicle molds, add a layer of the yogurt mixture, followed by a dollop of the raspberry swirl. Use a skewer or the back of a spoon to gently swirl the two mixtures together. Repeat until the molds are full, ending with a raspberry layer on top.

        Insert Sticks: If your molds have a lid, place it on top, then insert popsicle sticks into the center of each mold. If your molds don’t have lids, just carefully balance the sticks.

          Freeze: Place the molds in the freezer for at least 4 hours, or until completely frozen.

            Unmold and Enjoy: To remove the pops, run warm water over the outside of the molds for a few seconds or gently twist to release. Enjoy these refreshing treats on a warm day or as a healthy dessert!
