1 tablespoon lemon juice

1 cup Greek yogurt (plain or vanilla)

1 cup heavy cream

1/2 cup sweetened condensed milk

1 cup crushed shortbread cookies (plus extra for topping)

1/4 cup melted butter

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss to coat, then let the mixture sit for about 15-20 minutes to macerate and release some juice. Once ready, mash half of the strawberries with a fork for texture, and keep the other half diced for layering later.

    Make the Yogurt Filling: In a separate large bowl, whip the heavy cream until stiff peaks form. In another bowl, mix the Greek yogurt, sweetened condensed milk, and vanilla extract until smooth. Carefully fold the whipped cream into the yogurt mixture until well combined.

      Combine Strawberry Mixture: Gently fold in the mashed strawberries and the diced strawberries into the yogurt mixture until evenly distributed.

        Create the Crust: In a mixing bowl, combine the crushed shortbread cookies, melted butter, and a pinch of salt until well blended. Press this mixture firmly into the bottom of a lined 8x8 inch baking dish to form an even crust.
