Preheat the Waffle Iron: Plug in your waffle iron and set it to medium heat. If your waffle iron has a non-stick coating, you may not need extra oil/butter.
Prepare the Bread: Take each slice of bread and spread a thin layer of softened butter on one side. This will be the side that gets grilled.
Assemble the Waffle Sandwiches: On the non-buttered side of four slices, sprinkle a bit of salt and pepper, then add a generous layer of shredded cheese. If you're using any optional add-ins, layer a few pieces on top of the cheese before adding another slice of bread on top, buttered side facing out. Repeat with the remaining slices.
Flavor Boost (Optional): For an extra flavor kick, mix the garlic powder and dried oregano or Italian seasoning into the melted butter and brush it on the outer sides of the waffle sandwiches.
Cook in Waffle Iron: Carefully place the assembled sandwiches into the preheated waffle iron. Close the lid and cook for about 3-5 minutes, or until the bread is golden brown and crispy, and the cheese is melted.
Serve: Once cooked, carefully remove the waffle sandwiches from the iron using a spatula. Allow to cool slightly before cutting each sandwich into quarters or bite-sized pieces.
