1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 ounces (225g) mushrooms, sliced (preferably cremini or button mushrooms)

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)

Salt and pepper to taste

1/4 cup chicken broth

1 tablespoon lemon juice

2 tablespoons fresh parsley, chopped (for garnish)

Optional: grated Parmesan cheese for serving

Prep the Chicken: Season the chicken pieces with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once hot, add the chicken pieces in a single layer and sear until golden, about 5-7 minutes. Turn them halfway through cooking for even browning. Remove the chicken from the skillet and set aside.

      Cook the Mushrooms: In the same skillet, add another tablespoon of butter. Once melted, add the sliced mushrooms. Sauté for about 4-5 minutes, or until they are browned and have released their moisture. Stir occasionally to ensure even cooking.

        Add Garlic and Herbs: Add the minced garlic, thyme, and rosemary to the skillet with the mushrooms, stirring for about 1 minute until fragrant.

          Combine: Return the seared chicken to the skillet. Pour in the chicken broth and lemon juice, stirring everything to combine. Bring the mixture to a simmer and let it cook for an additional 5-7 minutes, or until the chicken is cooked through and the sauce slightly thickens.
