4 medium-sized russet potatoes

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

¼ cup grated Parmesan cheese

Olive oil for drizzling

Extra parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the potatoes thoroughly and pat them dry. Place them on a cutting board. To create the Hasselback style, slice each potato thinly (about 1/8 inch) without cutting all the way through, leaving about ¼ inch at the bottom intact. Use chopsticks or the handles of wooden spoons on either side of the potato to prevent cutting through.

      Make Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, chopped parsley, sea salt, black pepper, and smoked paprika (if using). Mix well until thoroughly combined.

        Brush the Potatoes: Using a pastry brush or spoon, generously brush the garlic butter mixture over the top and in between the slices of each potato, making sure to get the garlic and herbs into those crevices.

          Add Cheese: Sprinkle the grated Parmesan cheese over the top of the buttered potatoes, ensuring some gets in between the slices as well.

            Drizzle with Olive Oil: Lightly drizzle the potatoes with olive oil for an extra crispy finish.

              Bake: Place the potatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for 45-50 minutes or until the potatoes are tender and the outer edges are crispy. Baste with the remaining garlic butter halfway through baking for maximum flavor.
