4 medium-sized russet potatoes

6 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

1/2 cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the russet potatoes thoroughly and pat them dry. Leave the skins on for a rustic touch and extra flavor.

      Make Hasselback Cuts: Place the potato on a cutting board. Using a sharp knife, make thin, even slices about 1/8 inch apart, taking care not to cut all the way through (stop about 1/4 inch from the bottom). You can place wooden chopsticks or a wooden spoon on either side of the potato to prevent cutting all the way through.

        Mix Garlic Butter: In a small bowl, combine the melted butter, minced garlic, chopped rosemary, thyme, salt, and pepper. Stir until all ingredients are well mixed.

          Brush the Potatoes: Place the potatoes on a baking sheet lined with parchment paper. Gently spread the slices open a bit and brush the garlic butter mixture generously over each potato, ensuring some of the mixture seeps into the cuts.

            Bake the Potatoes: Roast in the preheated oven for about 45-55 minutes, depending on the size of your potatoes, until the edges are crispy and the insides are tender. Brush with remaining garlic butter halfway through for extra flavor.

              Add Cheese (Optional): If desired, sprinkle the grated Parmesan cheese over the potatoes during the last 10 minutes of baking, allowing it to melt and turn golden.

                Garnish and Serve: Once the potatoes are done, remove them from the oven. Let cool slightly, then garnish with fresh parsley before serving.
