Garlic Butter Roasted Carrots

1 lb (450g) baby carrots (or regular carrots, peeled and sliced)

3 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon honey (optional, for sweetness)

Salt and pepper to taste

Zest of 1 lemon

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: If using regular carrots, peel and cut them into evenly sized sticks, about 1-inch long. Baby carrots can be used whole.

      Make the Garlic Butter: In a small saucepan, melt the butter over low heat. Add the minced garlic and thyme, and cook for about 1-2 minutes until fragrant but not browned. Remove from heat and stir in honey, if using, along with lemon zest. Season with salt and pepper to taste.

        Combine Carrots and Garlic Butter: In a large mixing bowl, toss the carrots with the garlic butter mixture, making sure they are evenly coated.

          Roast the Carrots: Spread the coated carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.

            Garnish and Serve: Once the carrots are done roasting, remove them from the oven and transfer to a serving dish. Sprinkle with fresh parsley for color and additional flavor. Serve warm.
