4 (6 oz.) salmon fillets

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1 teaspoon dried thyme

1/2 teaspoon paprika

Salt and pepper, to taste

1 zucchini, sliced into rounds

1 cup cherry tomatoes, halved

Fresh parsley, for garnish

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Foil: Cut 4 large sheets of aluminum foil (about 12x18 inches each).

      Make the Garlic Butter: In a small bowl, whisk together the melted butter, minced garlic, lemon juice, lemon zest, dried thyme, paprika, salt, and pepper until combined.

        Assemble the Foil Packs:

          - Lay one salmon fillet in the center of each foil sheet.

            - Drizzle each fillet with the garlic butter mixture, making sure to coat it evenly.

              - Arrange sliced zucchini and cherry tomatoes around the salmon on each foil pack.

                - Drizzle any remaining garlic butter over the vegetables.

                  Seal the Foil Packs: Fold the sides of the foil over the salmon and veggies, then fold the ends up to seal tightly.

                    Bake: Place the foil packs on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flaky.
