12 lasagna noodles

1 pound shrimp, peeled and deveined

6 tablespoons unsalted butter, divided

4 cloves garlic, minced

1/2 teaspoon red pepper flakes

1 cup dry white wine

2 cups heavy cream

1 cup grated Parmesan cheese, divided

2 cups shredded mozzarella cheese, divided

1 tablespoon lemon juice

Zest of 1 lemon

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      In a large skillet, melt 4 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

        Add the shrimp to the skillet, cooking for 2-3 minutes until they turn pink and opaque. Pour in the white wine and let it simmer for about 2 minutes.

          Reduce heat to low, then stir in the heavy cream, lemon juice, lemon zest, and 1/2 cup of Parmesan cheese. Season with salt and pepper to taste. Allow the sauce to simmer for about 5 minutes, until slightly thickened.

            In a greased 9x13-inch baking dish, spread a thin layer of the shrimp scampi sauce on the bottom.

              Layer 4 lasagna noodles on top, followed by another layer of the shrimp sauce, 1/3 of the mozzarella cheese, and 1/4 cup of Parmesan cheese. Repeat the layering process twice more, finishing with a final layer of noodles and the remaining shrimp sauce on top.

                Sprinkle the remaining mozzarella and Parmesan cheese over the top layer of the lasagna.

                  Melt the remaining 2 tablespoons of butter in a small bowl and drizzle it over the top of the cheese.

                    Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                      Let the lasagna rest for about 10 minutes before slicing. Garnish with fresh parsley and serve.
