Ingredients

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon fresh lemon juice

2 tablespoons fresh parsley, chopped

Salt and pepper, to taste

4 slices of rustic bread (like sourdough or ciabatta)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Instructions

Prepare the Shrimp: In a medium bowl, season the shrimp with salt, pepper, and lemon juice. Let it sit for about 10 minutes to marinate.

Make the Garlic Butter: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and red pepper flakes, cooking until fragrant (about 1-2 minutes).

Cook the Shrimp: Add the marinated shrimp to the skillet and cook until they are pink and opaque, about 3-4 minutes on each side. Stir in the chopped parsley, then remove from heat.

Toast the Bread: Preheat your oven’s broiler. Place the slices of rustic bread on a baking sheet and spread the remaining 2 tablespoons of butter evenly on both sides of each slice. Toast them under the broiler for about 2-3 minutes on each side or until golden brown.

Assemble the Melts: On each toasted slice of bread, layer the cooked garlic butter shrimp evenly. Top with shredded mozzarella and a sprinkle of grated Parmesan cheese.

Melt the Cheese: Return the topped toast to the oven under the broiler for an additional 2-3 minutes, or until the cheese is bubbly and melted.

Serve: Remove from the oven and let cool slightly before serving. Garnish with additional parsley, if desired, and enjoy your delicious Garlic Butter Shrimp Toast Melts!
