1.5 lbs sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

6 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried)

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Steak: Start by trimming any excess fat from the sirloin steak, then cut it into bite-sized cubes (approximately 1-inch each). Pat the cubes dry with paper towels to ensure a good sear.

    Seasoning: In a large bowl, combine the steak cubes with smoked paprika, salt, and pepper. Toss well to coat the steak evenly with the seasonings.

      Heat the Pan: In a large skillet, preferably cast iron, heat 2 tablespoons of butter over medium-high heat until melted and bubbly.

        Sear the Steak Bites: Add the seasoned steak cubes to the hot skillet in a single layer. Cook for about 2-3 minutes on the first side without moving them, allowing a nice crust to develop. Turn the steak bites and repeat for another 2-3 minutes until they're browned and cooked to your preferred doneness (medium rare is about 130°F).

          Add Garlic and Herbs: Once the steak is cooked, lower the heat to medium. Add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme into the skillet. Cook for another minute, stirring frequently until the garlic is fragrant but not burnt.

            Toss and Glaze: Once the garlic is aromatic, toss the steak bites in the garlic butter mixture to ensure they are well coated.
