Ingredients

4 medium cucumbers, sliced into thin rounds

4 cloves of garlic, minced

1/4 cup fresh dill, finely chopped (or 2 tablespoons dried dill)

1/2 cup white vinegar

1/2 cup water

2 tablespoons granulated sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a little heat)

1 tablespoon olive oil (optional for added richness)

Instructions

Prepare the Cucumbers: Start by washing the cucumbers thoroughly. Thinly slice them into rounds and place them in a large bowl. If you prefer, you can also cut them into spears.

Make the Marinade: In a separate bowl, whisk together the minced garlic, fresh dill, white vinegar, water, sugar, salt, black pepper, and red pepper flakes (if using). Stir until the sugar and salt are completely dissolved.

Combine Veggies and Marinade: Pour the marinade over the sliced cucumbers. Gently toss the cucumbers to ensure they are well-coated with the marinade.

Marinate: Cover the bowl with plastic wrap or transfer the mixture to a large jar with a tight-fitting lid. Place it in the refrigerator for at least 1 hour, but for best results, let them marinate for several hours or even overnight. The longer they sit, the more flavor they will absorb.

Serve: When ready to serve, drizzle with a tablespoon of olive oil for added richness, if desired. Serve the Garlic Dill Cucumbers chilled as a refreshing side dish or snack!
