2 cups all-purpose flour

1 teaspoon instant yeast

3/4 teaspoon salt

3/4 cup warm water (about 110°F/43°C)

2 tablespoons olive oil, plus extra for grilling

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh thyme leaves

Sea salt, for sprinkling

Instructions
 

In a large mixing bowl, combine the flour, instant yeast, and salt. Mix well until evenly distributed.

    Gradually pour in the warm water and 2 tablespoons of olive oil. Mix with a wooden spoon until a dough starts to form.

      Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.

        Lightly oil a clean bowl and place the dough inside, turning it to coat with oil. Cover with a damp cloth or plastic wrap and let it rise in a warm place for 1 hour, or until it doubles in size.

          While the dough is rising, prepare the herb garlic mixture. In a small bowl, mix the minced garlic, rosemary, parsley, thyme, and a pinch of salt together. Set aside.

            Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and let them rest for about 10-15 minutes.

              Preheat your grill to medium-high heat (around 400°F or 200°C).

                On a floured surface, roll out each ball into a flat oval or rectangle about 1/4 inch thick.

                  Brush one side of the flatbread with olive oil and sprinkle some of the herb garlic mixture on top. Gently press the herbs into the dough.

                    Place the flatbread oil side down on the hot grill. Brush the other side with olive oil and sprinkle more of the herb mixture on top. Grill for 3-4 minutes on the first side, until you see grill marks and the edges begin to bubble.

                      Flip the flatbread and grill for another 2-3 minutes on the other side until it’s golden and cooked through.

                        Once done, remove from the grill and immediately sprinkle with a pinch of sea salt. Repeat the grilling process with the remaining flatbreads.

                          Serve warm, optionally with a side of marinara sauce or your favorite dip.
