2 pounds fresh mussels, cleaned and debearded

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 cup dry white wine (like Sauvignon Blanc)

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt, to taste

Freshly ground black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Crusty bread, for serving

Preparation of Mussels: Start by rinsing the mussels under cold water. Scrub the shells with a brush to remove any debris, and pull off the beards from each mussel if they have them. Discard any mussels that are cracked or remain open when tapped.

    Heat the Butter: In a large pot or deep skillet, melt the unsalted butter over medium heat. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

      Add the Wine: Pour in the dry white wine and bring the mixture to a simmer. This step will help to combine the flavors and provide a base for steaming the mussels.
