2 cups rotini or penne pasta

2 cups cooked chicken, shredded (rotisserie chicken works great)

3 cups fresh spinach, roughly chopped

2 cups marinara sauce

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for topping

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

1 tablespoon olive oil

1 cup shredded mozzarella cheese

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Chicken Mixture: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook for another 2-3 minutes until wilted.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, sautéed spinach and garlic, marinara sauce, heavy cream, Italian seasoning, red pepper flakes, and Parmesan cheese. Stir until everything is well mixed. Season with salt and pepper to taste.

          Assemble the Bake: Transfer the mixture to a greased 3-quart baking dish. Spread it out evenly and sprinkle the top with shredded mozzarella cheese and extra Parmesan cheese.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes or until the top is golden and bubbly.

              Cool and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
