Garlic Parmesan Focaccia Bread

4 cups all-purpose flour

2 teaspoons instant yeast

2 teaspoons salt

1 tablespoon sugar

1 ½ cups warm water (about 110°F/43°C)

¼ cup extra virgin olive oil, plus more for drizzling

6 cloves garlic, minced

½ cup grated Parmesan cheese

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon coarse sea salt (for sprinkling)

Freshly cracked black pepper (to taste)

Instructions
 

Prepare the Dough:

    In a large mixing bowl, combine the flour, instant yeast, salt, and sugar. Mix well. Slowly add the warm water and ¼ cup olive oil. Stir until a shaggy dough forms.

      Knead the Dough:

        Transfer the dough to a lightly floured surface and knead for about 5-7 minutes, until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for this process.

          First Rise:

            Form the dough into a ball and place it in a greased bowl. Cover it with a damp cloth or plastic wrap and let it rise in a warm location for 1-2 hours, or until doubled in size.

              Prepare for Baking:

                Once risen, punch down the dough to release gases. Grease a 13x18 inch baking pan with olive oil. Press the dough into the pan, stretching it evenly to fit.

                  Add Garlic and Seasonings:

                    In a small bowl, combine the minced garlic with about 3 tablespoons of olive oil. Brush this garlic oil mixture generously over the surface of the dough. Sprinkle the grated Parmesan cheese, chopped rosemary, coarse sea salt, and cracked black pepper evenly over the top.

                      Second Rise:

                        Cover the pan again and let the dough rise for another 30-45 minutes, allowing it to puff up slightly.

                          Preheat the Oven:

                            Preheat your oven to 425°F (220°C) during the second rise.

                              Dimple and Bake:

                                After the second rise, use your fingers to create dimples all over the surface of the dough. This helps to create a fluffy texture. Drizzle a little more olive oil over the top if desired.

                                  Place in the preheated oven and bake for 20-25 minutes, or until golden brown and cooked through.

                                    Cool and Serve:

                                      Remove the focaccia from the oven and let it cool in the pan for about 10 minutes. Transfer it to a wire rack to cool completely. Slice into squares or triangles and enjoy warm with your favorite dips or as a side to soups and salads.
