Garlic Shrimp Pasta with Spinach

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

2 cups fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup olive oil

1/4 cup white wine (or chicken broth)

1 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Juice of 1 lemon

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Add shrimp and seasoning: Add the shrimp to the skillet, season with red pepper flakes, salt, and pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Sauté spinach and tomatoes: In the same skillet, add the cherry tomatoes and cook for about 2 minutes until slightly softened. Then, add the chopped spinach and cook for another 2 minutes until wilted.

          Combine ingredients: Pour the white wine into the skillet to deglaze, scraping up any brown bits from the bottom. Allow it to simmer for about a minute until slightly reduced.

            Mix pasta and shrimp: Add the cooked spaghetti and shrimp back into the skillet. Toss everything together, adding the reserved pasta water a little at a time until the desired consistency is reached.

              Finish with lemon and cheese: Squeeze the lemon juice over the pasta and sprinkle with grated Parmesan cheese, if using. Toss well to combine all ingredients.

                Garnish and serve: Transfer the pasta to serving plates, garnish with chopped parsley, and enjoy immediately!
