Glazed Apricot Chicken

4 boneless, skinless chicken thighs

1 cup apricot preserves

1/4 cup soy sauce

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 clove garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

1 tablespoon olive oil

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a medium bowl, whisk together the apricot preserves, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes (if using).

    Marinate the Chicken: Season the chicken thighs with salt and pepper. Pour half of the marinade over the chicken, making sure it's well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the chicken from the marinade (discard the used marinade) and sear the chicken thighs for about 4-5 minutes on each side, until golden brown.

          Bake the Chicken: Once the chicken is seared, pour the reserved marinade over it and transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
