2 cups all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 large eggs

2 cups buttermilk

1/2 cup unsalted butter, melted

1 tsp vanilla extract

8 slices of crispy bacon

4 fried eggs (cooked sunny-side up preferred)

1 cup arugula or baby spinach

Maple syrup (for drizzling)

Optional: sliced avocado or cheese

Preheat Waffle Iron: Heat your waffle iron according to the manufacturer's instructions, and lightly grease it with non-stick cooking spray or a little melted butter.

    Make the Waffle Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract until smooth.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; a few lumps are okay.

        Cook Waffles: Pour a generous amount of batter onto the preheated waffle iron (about 1 cup, depending on the size of your iron). Close the lid and cook until the waffles are golden brown and crisp, about 4-5 minutes. Repeat with the remaining batter, placing cooked waffles on a wire rack to keep them warm.

          Prepare Breakfast Fillings: While the waffles are cooking, fry the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. In the same skillet, fry the eggs to your liking (sunny-side-up is recommended).

            Assemble the Sliders: For each slider, stack a waffle on the bottom, followed by a slice of crispy bacon, a fried egg, a handful of arugula, and an optional avocado slice or cheese. Top with another waffle.
