3 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 cup freshly grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking.

    Prepare the Carrots: Wash and peel the carrots. Using a vegetable peeler, carefully slice the carrots lengthwise into thin ribbons. If the carrots are particularly thick, you may need to cut them in half lengthwise before peeling to get wider ribbons.

      Season the Carrot Ribbons: In a large mixing bowl, combine the carrot ribbons, olive oil, sea salt, black pepper, garlic powder, and smoked paprika. Toss well to ensure all ribbons are evenly coated with the seasoning.
