Ingredients

2 medium zucchinis

1 cup freshly grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 large egg

1 tablespoon olive oil (optional for extra crispiness)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Zucchini: Wash and dry the zucchinis. Slice them into thin rounds, about 1/4 inch thick. Pat the slices with a paper towel to remove excess moisture.

Make the Breading Mixture: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, salt, and black pepper. Mix until well combined.

Prepare the Egg Wash: In another bowl, beat the egg until it's well blended. If you want an extra crispy coating, whisk in the olive oil with the egg.

Coat the Zucchini Slices: Dip each zucchini round into the egg wash, allowing any excess to drip off, then dredge it in the breading mixture, ensuring it is fully coated. Place the coated zucchini chips on the prepared baking sheet in a single layer.

Bake the Chips: Once all the zucchini slices are coated, bake them in the preheated oven for about 20-25 minutes or until they are golden brown and crispy. Flip them halfway through to ensure even cooking.

Serve and Enjoy: Once baked, remove the chips from the oven and let them cool for a few minutes before serving. Enjoy them as a tasty appetizer or a healthy snack!
