Golden Zucchini Parmesan Bites

2 medium zucchinis, sliced into 1/4-inch rounds

1 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably Italian seasoned)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/2 teaspoon salt

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Zucchini: Place the sliced zucchini on a clean kitchen towel or paper towels and sprinkle a little salt on them. Let them sit for about 10-15 minutes to draw out the moisture. Pat dry with another towel to remove excess moisture.

      Prepare the Coating: In a small bowl, whisk together the eggs. In another bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, black pepper, and salt.

        Coat the Zucchini: Dip each zucchini slice into the egg mixture, allowing excess to drip off, then coat it in the breadcrumb and Parmesan mixture. Press down gently to ensure the coating sticks. Place each coated bite on the baking sheet.

          Bake the Bites: Once all zucchini slices are coated and on the baking sheet, spray the tops lightly with cooking spray or drizzle a little olive oil over them. Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy. Flip halfway through for even crispiness.
