For the Chicken Marinade:

1 lb chicken thighs (boneless, skinless)

3 tablespoons olive oil

2 tablespoons fresh lemon juice

4 cloves garlic (minced)

2 teaspoons dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber (grated and excess moisture squeezed out)

2 cloves garlic (minced)

1 tablespoon fresh dill (chopped)

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper to taste

For Assembly:

Pita bread (4 pieces)

Sliced tomatoes (1 cup)

Sliced red onion (1/2 cup)

Sliced cucumber (1/2 cup)

Fresh parsley (for garnish)

Instructions
 

Marinate the Chicken:

    - In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and pepper. Add the chicken thighs and coat them well.

      - Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

        Prepare the Tzatziki Sauce:

          - In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, olive oil, and lemon juice. Stir well.

            - Season with salt and pepper to taste, then refrigerate for at least 30 minutes to allow the flavors to meld.

              Cook the Chicken:

                - Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill.

                  - Cook for about 5-7 minutes per side or until the internal temperature reaches 165°F (74°C).

                    - Once cooked, remove the chicken and let it rest for a few minutes before slicing it into strips.

                      Warm the Pita:

                        - Lightly warm the pita bread on the grill for about 1-2 minutes on each side, until soft and slightly toasted.

                          Assemble the Gyros:

                            - Lay the warm pita bread flat and layer with sliced chicken, fresh tomatoes, red onion, and cucumber.

                              - Generously drizzle the tzatziki sauce over the top.

                                - Garnish with fresh parsley, and fold the pita around the fillings.

                                  Serve:
