Greek Chicken Gyros – Homemade Tzatziki Included!

For the Chicken Marinade:

1.5 lbs boneless, skinless chicken thighs

1/4 cup olive oil

Juice of 1 lemon

4 cloves garlic, minced

1 tbsp dried oregano

1 tsp ground cumin

1 tsp paprika

Salt and pepper to taste

For the Homemade Tzatziki Sauce:

1 cup Greek yogurt

1/2 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Juice of 1/2 lemon

Salt and pepper to taste

For Assembly:

Pita bread (4-6 pieces)

Sliced tomatoes

Sliced red onion

Shredded lettuce

Feta cheese (optional)

Instructions
 

Marinate the Chicken:

    In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 1 hour, or preferably overnight for deeper flavor.

      Prepare the Tzatziki Sauce:

        In a medium bowl, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, dill, and lemon juice. Season with salt and pepper to taste. Chill in the refrigerator until ready to serve, allowing flavors to meld.

          Cook the Chicken:

            Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing it thinly.

              Warm the Pita:

                While the chicken rests, warm the pita bread on the grill for about 1-2 minutes on each side or until soft and pliable.

                  Assemble the Gyros:

                    Lay the warmed pita flat and fill with sliced chicken, then top with sliced tomatoes, red onion, shredded lettuce, and a generous dollop of tzatziki sauce. Sprinkle with feta cheese if desired. Roll or fold the pita to enclose the filling.

                      Serve:

                        Serve the gyros immediately with extra tzatziki on the side. Enjoy your homemade Greek feast!
