Greek Chicken Gyros – Homemade Tzatziki Included!

For the Chicken Gyros:

1.5 lbs boneless, skinless chicken thighs

3 tablespoons olive oil

2 tablespoons lemon juice

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

4-6 pita bread or flatbreads

Fresh vegetables for topping (sliced tomatoes, red onions, and lettuce)

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon lemon juice

1 tablespoon fresh dill (or 1 teaspoon dried dill)

Salt and pepper to taste

Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken thighs and coat them well. Cover and marinate in the refrigerator for at least 1 hour (or overnight for more flavor).

    Make the Tzatziki Sauce: In a bowl, mix Greek yogurt, grated cucumber (after squeezing out excess water), minced garlic, olive oil, lemon juice, dill, salt, and pepper. Stir until well combined. Cover and refrigerate for at least 30 minutes to let the flavors meld.

      Cook the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Alternatively, you can pan-fry the chicken in a skillet with a little olive oil over medium-high heat.

        Slice the Chicken: Once cooked, transfer the chicken to a cutting board. Let it rest for a few minutes, then slice it into strips.

          Warm the Pita: While the chicken rests, briefly warm the pita bread on the grill or in a dry skillet until pliable.

            Assemble the Gyros: On each pita, layer sliced chicken, fresh tomatoes, red onions, and lettuce. Generously drizzle with tzatziki sauce.

              Serve: Roll the pita tightly around the filling, wrap in parchment paper if desired, and serve immediately alongside extra tzatziki on the side for dipping.
