2 cups cooked chicken breast, diced (preferably grilled)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup Kalamata olives, pitted and halved

1/2 red onion, thinly sliced

1 bell pepper (any color), diced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Juice of 1 lemon

Prepare the Vegetables: Start by washing all fresh produce. Halve the cherry tomatoes, dice the cucumber and bell pepper, and slice the red onion thinly.

    Mix Ingredients: In a large salad bowl, combine the diced cooked chicken, cherry tomatoes, cucumber, Kalamata olives, red onion, bell pepper, and feta cheese.

      Make the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, lemon juice, salt, and pepper until well combined.
