Greek Chicken Souvlaki Bowls

For the Chicken Marinade:

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes

¼ cup olive oil

3 tablespoons red wine vinegar

Zest and juice of 1 lemon

4 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

For the Bowls:

2 cups cooked quinoa or rice (white or brown)

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 cup crumbled feta cheese

Fresh parsley or dill, chopped for garnish

Tzatziki sauce (store-bought or homemade, see instructions below)

Homemade Tzatziki Sauce (optional):

1 cup Greek yogurt

1 cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped

Juice of ½ lemon

Salt and pepper to taste

Marinate the Chicken:

    In a large bowl, combine olive oil, red wine vinegar, lemon zest and juice, minced garlic, oregano, thyme, paprika, salt, and pepper. Add the chicken cubes and toss until well-coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Prepare Tzatziki Sauce:

        In a medium bowl, combine the Greek yogurt, grated cucumber (ensure it's well-drained), minced garlic, olive oil, fresh dill, lemon juice, salt, and pepper. Mix well until creamy and smooth. Store in the refrigerator until ready to serve.

          Cook the Chicken:

            Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers (if using wooden skewers, soak them in water for 30 minutes). Grill the chicken skewers for 10-12 minutes, turning occasionally, until cooked through and slightly charred.

              Assemble the Bowls:

                In serving bowls, start with a base of quinoa or rice. Slice or remove the chicken from the skewers and place it on top. Add the halved cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, and crumbled feta cheese.

                  Serve:
