Ingredients

2 cups cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1 red onion, thinly sliced

1 cup Kalamata olives, pitted

1 cup feta cheese, crumbled

¼ cup fresh parsley, chopped

¼ cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions

Prepare the Vegetables: In a large salad bowl, combine the cherry tomatoes, cucumber, bell pepper, and red onion. Toss gently to mix the ingredients evenly.

Add Olives and Feta: Stir in the Kalamata olives and crumbled feta cheese, ensuring that the salad ingredients remain intact.

Make the Dressing: In a small bowl or a mason jar, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper. If using a jar, you can close the lid and shake to combine thoroughly.

Dress the Salad: Drizzle the feta dressing over the salad and gently toss until all ingredients are well coated with the dressing.

Garnish: Top the salad with the fresh parsley and additional feta if desired, giving it a final light toss.

Serve: This salad is best enjoyed fresh but can be stored in the fridge for up to an hour before serving. Serve it chilled or at room temperature.
