Green Chili Breakfast Quesadilla

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (4 oz) diced green chilies, drained

1 small onion, finely chopped

1 bell pepper (green or red), diced

2 large eggs

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Instructions
 

Prepare the Eggs: In a medium bowl, crack the eggs and whisk them together with ground cumin, garlic powder, salt, and pepper. Set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until they are translucent and tender, about 5-7 minutes.

      Add Green Chilies: Stir in the drained green chilies and sauté for another minute until heated through. Remove the mixture from the skillet and set aside.

        Cook the Eggs: In the same skillet, pour in the whisked eggs. Cook, stirring gently, until the eggs are scrambled and just set, about 3-4 minutes. Remove from heat.

          Assemble the Quesadilla: On a clean surface, place one tortilla down, and layer with a generous amount of cheddar and Monterey Jack cheese, followed by the scrambled egg mixture, and lastly, the sautéed vegetable and green chili mix. Top with another tortilla.

            Cook the Quesadilla: Wipe the skillet clean and return it to medium-high heat. Place the assembled quesadilla in the skillet and cook for 3-4 minutes on one side until golden brown and cheese is melting. Carefully flip and cook for another 3-4 minutes on the other side.
