Grilled BBQ Chicken Quesadillas

2 cups cooked, shredded chicken (preferably grilled or rotisserie)

1/2 cup barbecue sauce (your favorite kind)

1 cup shredded cheese (cheddar and Monterey Jack blend works well)

1 medium red onion, thinly sliced

1 red bell pepper, sliced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cumin

Salt and pepper to taste

4 large flour tortillas

Fresh cilantro for garnish (optional)

Sour cream and guacamole for serving

Prepare the Chicken Filling: In a mixing bowl, combine the shredded chicken with barbecue sauce, garlic powder, paprika, cumin, salt, and pepper. Mix until the chicken is well-coated in the barbecued seasoning.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced red onion and red bell pepper, cooking until they are soft and slightly caramelized (about 4-5 minutes). Remove from heat and set aside.

      Assemble the Quesadillas: Lay one tortilla on a clean surface. On one half of the tortilla, sprinkle a layer of cheese, add a generous portion of the BBQ chicken mixture, followed by the sautéed vegetables, and then top with more cheese. Fold the tortilla in half to enclose the filling. Repeat with the remaining tortillas and filling.

        Grill the Quesadillas: In a clean skillet or grill pan, heat over medium heat. Lightly grease with a touch of oil or cooking spray. Place the folded quesadilla in the skillet and cook for about 3-4 minutes per side, or until the tortillas are golden brown and crispy, and the cheese has melted. Continue with the remaining quesadillas, adding oil as needed.

          Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges. Garnish with fresh cilantro, if desired. Serve warm with sour cream and guacamole on the side.
