Grilled BBQ Chicken Wraps

2 large chicken breasts

1 cup barbecue sauce (your favorite brand)

4 whole wheat or spinach wraps

1 cup shredded cheddar cheese

1 cup romaine lettuce, chopped

1 medium red bell pepper, sliced

1/2 small red onion, thinly sliced

1 avocado, sliced

Olive oil for grilling

Salt and pepper to taste

Optional: fresh cilantro for garnish

Marinate the Chicken: In a bowl, coat the chicken breasts with 1/2 cup of barbecue sauce, ensuring they are evenly covered. Allow the chicken to marinate for at least 30 minutes (up to 2 hours in the fridge for more flavor).

    Preheat the Grill: Preheat your grill to medium-high heat. Lightly brush the grill grates with olive oil to prevent sticking.

      Grill the Chicken: Remove the chicken from the marinade, letting excess sauce drip off. Sprinkle with salt and pepper. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). In the last 2 minutes of grilling, brush the chicken with the remaining barbecue sauce for extra flavor.

        Rest the Chicken: Once fully cooked, remove the chicken from the grill and let it rest for 5 minutes. This will help retain its juices.

          Prepare the Wraps: While the chicken rests, lay out the wraps on a clean surface. Evenly distribute the chopped romaine, sliced bell pepper, red onion, and avocado over each wrap.

            Slice the Chicken: After resting, slice the grilled chicken into strips. Arrange the chicken strips on top of the veggies on each wrap.

              Add Cheese and Fold: Sprinkle shredded cheddar cheese over the chicken. Drizzle a bit more barbecue sauce on top (if desired). To wrap, fold in the sides of the wrap, then tightly roll from the bottom up.

                Optional – Toast the Wraps: If you prefer a warm, crispy wrap, you can grill the finished wraps for about 2-3 minutes on each side until they're golden brown and heated through.
