Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Juice of 1 lemon

Fresh parsley, chopped for garnish

Instructions

Marinate the Steak: In a bowl, combine the olive oil, lemon juice, salt, pepper, rosemary, and thyme. Add the steak cubes and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes, up to 2 hours for more flavor.

Prepare the Garlic Butter: While the steak is marinating, melt 2 tablespoons of butter in a small saucepan over medium heat. Add the minced garlic and sauté for about 1-2 minutes, just until fragrant (be careful not to let it brown). Remove from heat and set aside.

Preheat the Grill: Heat your grill or grill pan over high heat until it's very hot. Lightly grease the grill grates with a little oil to prevent sticking.

Cook the Steak Bites: Remove the steak from the marinade and thread the cubes onto skewers (if using wooden skewers, soak them in water for about 30 minutes first). Grill the steak bites for 2-3 minutes on each side for medium-rare, or until they reach your desired level of doneness.

Add the Garlic Butter: In the last minute of grilling, brush the grilled steak bites generously with the prepared garlic butter, allowing the flavor to soak in. Flip them once for an even coating.

Serve: Remove the steak bites from the grill and let them rest for a minute. Transfer to a serving platter, drizzle with any remaining garlic butter, and garnish with fresh parsley.

Enjoy: Serve hot with your favorite dipping sauce or alongside a fresh salad or crusty bread!
