1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

3 tablespoons Greek yogurt

2 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lemon

2 cups cooked brown rice or quinoa

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

½ cup feta cheese, crumbled

¼ cup Kalamata olives, pitted and halved

Fresh parsley, chopped, for garnish

Tzatziki sauce for drizzling

Instructions
 

Marinate the Chicken: In a bowl, mix olive oil, Greek yogurt, minced garlic, oregano, paprika, salt, pepper, and lemon juice. Add chicken thighs and coat well. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes (up to 2 hours for stronger flavor).

    Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Remove chicken from marinade and discard the marinade. Grill chicken for 6-7 minutes on each side or until fully cooked and no longer pink inside (internal temperature should reach 165°F). Remove and let it rest for a few minutes before slicing.

      Prepare the Base: While the chicken is grilling, prepare your bowls by dividing the cooked brown rice or quinoa evenly between serving bowls.

        Assemble the Bowls: Slice the grilled chicken into strips and place over the rice/quinoa. Top with halved cherry tomatoes, diced cucumber, sliced red onion, crumbled feta, and Kalamata olives.
