Grilled Honey Garlic Chicken Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon apple cider vinegar

1 tablespoon sesame oil

1 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon cornstarch (optional, for thickening marinade)

1 bell pepper (any color), cut into 1-inch pieces

1 medium red onion, cut into wedges

Fresh parsley, chopped (for garnish)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken:

    - In a medium mixing bowl, whisk together honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, sesame oil, black pepper, and salt. For a thicker marinade, mix in the cornstarch.

      - Add the cubed chicken to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

        Prepare the Skewers:

          - If using bamboo skewers, make sure to soak them in water for 30 minutes to prevent burning on the grill. If using metal skewers, you can skip this step.

            - Once marinated, thread the chicken cubes onto the skewers, alternating with bell pepper pieces and onion wedges.

              Preheat the Grill:

                - Preheat your grill to medium-high heat. If using a stovetop grill pan, heat it over medium-high heat and lightly grease it with cooking spray or oil.

                  Grill the Skewers:

                    - Place the skewers on the grill, and cook for about 5-7 minutes on each side, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C), and the vegetables are slightly charred.

                      Baste for Extra Flavor:

                        - For added richness, brush the skewers with leftover marinade during the last few minutes of cooking, allowing it to caramelize slightly.
