Grilled Lemon Herb Chicken

1/4 cup olive oil

3 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon honey

2 teaspoons dried oregano

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

Salt and pepper to taste

Prepare the Marinade: In a medium bowl, whisk together the lemon juice, olive oil, minced garlic, Dijon mustard, honey, oregano, thyme, rosemary, salt, and pepper until well combined.

    Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

        Grill the Chicken: Remove the chicken from the marinade, allowing the excess to drip off. Discard the remaining marinade. Place the chicken on the grill and cook for about 6-7 minutes on one side.

          Flip and Cook: Turn the chicken over and grill for an additional 6-7 minutes or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

            Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute.
