Grilled Peach and Burrata Salad

4 ripe peaches, halved and pitted

8 oz burrata cheese

4 cups arugula or mixed greens

1/4 cup balsamic glaze

1/4 cup extra virgin olive oil

1/2 teaspoon sea salt

1/4 teaspoon freshly cracked black pepper

1/4 cup toasted pine nuts or walnuts

Fresh basil leaves for garnish

Instructions
 

Preheat the Grill: Heat your grill to medium-high. If using a grill pan, preheat it on medium heat on the stovetop.

    Prepare the Peaches: Brush the cut sides of the peach halves with a little olive oil to prevent sticking.

      Grill the Peaches: Place the peaches cut-side down on the grill. Grill for about 4-6 minutes, until they have nice grill marks and are slightly softened. Remove from the grill and let them cool for a few minutes.

        Assemble the Salad Base: In a large serving bowl or platter, spread the arugula or mixed greens as the base.

          Add Burrata: Gently tear the burrata cheese into smaller pieces and place it evenly over the greens.

            Top with Grilled Peaches: Slice the grilled peaches into quarters or sixths (depending on your preferences) and arrange them over the greens and burrata.
