Ingredients

4 ripe peaches, halved and pitted

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

4 cups mixed greens (arugula, spinach, or your favorite lettuce)

8 oz burrata cheese

¼ cup balsamic glaze

2 tablespoons chopped fresh basil

2 tablespoons chopped walnuts or pecans (optional)

Instructions

Preheat the Grill: Preheat your grill to medium-high heat. If you’re using a grill pan, heat it over medium-high on your stovetop.

Prepare the Peaches: In a bowl, toss the halved peaches with 1 tablespoon of olive oil, and sprinkle with salt and freshly cracked black pepper.

Grill the Peaches: Place the peach halves cut-side down on the grill. Grill for 4-5 minutes, or until grill marks appear and the peaches are slightly softened. Flip and grill for another 2-3 minutes. Remove from the grill and let cool slightly.

Arrange the Greens: While the peaches are grilling, arrange the mixed greens on a large serving platter or individual plates.

Add the Burrata: Gently tear the burrata cheese into pieces and place it over the mixed greens.

Assemble the Salad: Once the peaches are cool, arrange the grilled peach halves around and on top of the burrata.

Dress the Salad: Drizzle the salad with the remaining 1 tablespoon of olive oil and the balsamic glaze. Sprinkle with fresh basil and chopped nuts, if using.

Final Touch: Add a final drizzle of balsamic glaze and a pinch of salt and pepper to taste before serving.

Serve: Enjoy your Grilled Peach & Burrata Salad either as a light meal or a flavorful side dish!
